“Just like the jewelry that inspires it, Coco Trove is a cocktail that channels the essence of beachside minimalism - natural, effortless, and quietly luxurious. Built around the purity of coconut, it features a salted coconut water syrup that brings both freshness and a hint of ocean salinity. White rum and coconut liqueur lends a smooth tropical base, while Fino sherry adds a dry, briny complexity reminiscent of sea spray and coastal breeze.
Clarified lime, refined with red seaweed-derived agar agar, lends crisp citrus notes without clouding the drink’s crystal clarity. A final splash of aquafaba gives the cocktail its dreamy coastal signature - a light, silky foam that mimics the texture of sea foam as it laps the shore.

Combine all ingredients in a small saucepan and bring to a boil over medium heat, stirring to dissolve the sugar. Reduce to low and simmer for 2 minutes to concentrate the flavors. Remove from heat and let cool completely. Transfer to an airtight container and refrigerate. Use within 2 weeks.
Place a small saucepan on a kitchen scale and tare it to zero. Weigh out 87.5g of strained lime juice directly into the pan. Move the saucepan to the stove over medium-low heat and whisk in the agar agar powder, stirring continuously to hydrate and fully incorporate. Bring the mixture to a gentle boil, then continue to simmer for 2 minutes, ensuring the agar is fully dissolved.
** If you do not have agar agar, it will only affect the clarity and the overall aesthetic, so it will still be just as delicious without! **
Remove from heat and whisk in the remaining lime juice. Transfer the mixture to the freezer and allow it to set into a loose gel, approximately 1.5 hours.
Once set, loosen the mixture by giving it a stir . Double strain the gel through a fine mesh strainer lined with cheesecloth. The first drops may appear cloudy - simply return them to the top of the strainer and the rest should come out clear. Straining may take 4 hours or more. Do not rush or force the process, as this can cloud the clarified juice.
Transfer the clarified lime juice to an airtight container and refrigerate. For best results, use it within 2 days.
Add all ingredients to a cocktail shaker and dry shake vigorously to activate the foam. Add ice and shake again until well chilled. Pour into a chilled coupe glass and let the cocktail rest for a few seconds, allowing the foam to rise and settle on the surface.
